Olive trees planted in soil characterized by schist and granite, the olives are from an integrated production system, having been harvested according to their ideal state of ripeness.

Olive oil produced from green olives, characterized by a very low acidity, 0.2%, green, bitter and spicy fruity taste. Early Harvest extra virgin olive oil has higher chlorophyll content and is richer in healthy polyphenols. It is also characterized by its higher concentration of the anti-inflammatory and antioxidant oleocanto.
