Extra virgin olive oil produced from varieties originating from centuries-old olive trees at Quintas da Costa de Cima e Sol.

The harvest is carried out manually, with a view to preserving the structure of the tree, and the oil is extracted by mechanical means at low temperatures (less than 30ºC) in the mill with a mill where a mechanical extraction is subsequently carried out in two phases. The decantation process lasts between 2 and 3 months.
