Manual selection of the grapes on a carpet of choice, at the entrance to the cellar. Mild pneumatic pressing, followed by fermentation in stainless steel vats for 3 weeks at a temperature of 15 °C. End of alcoholic fermentation in French oak barrels: 20% new, 80% used. 6-month internship in barrels, with weekly removal (“battonage”).

Tasting Note: Very fragrant, intense, resembling orange blossom, kippers, some tropical fruit, alongside smoked notes of the barrel that give complexity to the set. It is shown to be corpse and creamy, but without losing lightness and fineness. Suggestions lemonades give it plenty of freshness and prolong the finish.

Excellent to accompany grilled or roasted fatty fish, stalls, cod. It will be perfect with poultry in the oven or soft-paste sheep cheeses.
