The grapes are harvested manually, the bunches are manually selected on a double sorting table before and after destemming and gently pressed. Each variety and each plot of land is vinified separately. Alcoholic fermentation takes place in stainless steel vats and concrete vats for two weeks, followed by maceration for a total of about 10-15 days. Malolactic fermentation takes place in stainless steel. The wine remains in barrels in the climate-controlled cellars of Ornellaia for around 15 months. After the first 12 months, the wine is then returned to the barrels for another three months of aging. The wine remains in the bottle for a further six months before release. Deep ruby red color, with purple reflections, Le Serre Nuove dell' Ornellaia 2020 clearly reveals an evident and generous aromatic expression, characterized by aromas of ripe red fruits. The wine is smooth, round and enveloping, but full-bodied and at the same time substantial, showing a great balance between structure, fullness and elegance. |
