The two castes are de-wined and delicately crushed before they are pressed. The wine ferments in French oak barrels, 50% in new barrels and 50% in two-wine barrels. Bâtonnage is done 3 times a week. The wine is aged in barrels for 5 months, 50% in new 225-liter French oak barrels.

The wine is powerful, rich and with an abundance of fruit and flowers, like the Viscosa Dittrichia that is found among the bards of the vineyards. It has remarkable volume and structure and a long, fresh finish.
