wood's agricultural rum is a national treasure, still little recognized for its specificities. Obtained exclusively by alcoholic fermentation and distillation of the sugar cane juice grown in the archipelago, it is for this reason classified as agricultural rum, distinct from the so-called 'industrial' rum, which results from the distillation of fermented molasses.

In this sense, agricultural rum can only be produced once a year, when harvesting (usually between April and July) and processing the cane. This is done according to traditional production methods in mechanical devices that take us back to the times of the Industrial Revolution, as well as the experience accumulated over generations.
