The grapes are vinified by grape varieties or in lots chosen in the vineyard. After gentle crushing and total destemming, the grapes are sent to stainless steel vats, where alcoholic fermentation takes place. A long and gentle maceration is carried out at a controlled temperature. It carries out the malolactic fermentation in French oak barrels. It is then aged for approximately 24 months in French oak barrels. The final blend is made based on the selection of the best wines, resulting from the numerous tastings and analyzes carried out during this period. In order to preserve the highest quality, it is only subjected to filtration before bottling. Tasting Notes: Ruby color. Very intense and complex aroma, with very evident spice notes, light balsamic resin, fresh red fruits and discreet and well-integrated wood. In the mouth it has a good volume and well-integrated acidity. The notes of red fruits and spices stand out, especially pepper. The tannins are well present, but round and smooth. The finish is very elegant, persistent and of great harmony. It is natural for deposits to form in bottles. After the 2nd year of bottling, it is recommended that the wine be decanted before being consumed. Ideal to accompany cheeses, red meat and game dishes. Robert Parker: 93/100 |
