The grapes, exclusively from the Alvarinho grape, are harvested by hand and transported to the cellar in a short time. After pressing, the obtained wort decants for 48 hours, fermentation follows, at controlled temperature. Fermentation occurs essentially in stainless steel (about 15% of the total volume ferments in used oak hulls), with maintenance of the fine lees until early May, the month when bottling occurs.
