Vineyards from Câmara de Lobos and São Vicente, characterized by different mixtures of soils, of volcanic nature, derived mainly from basalt, trachytes, tufa, slag and conglomerates. Temperate climate with oceanic characteristics, with a variation in temperature, humidity and rainfall, depending on the altitude. Hand harvest, with qualitative selection (best grapes from the 1999 Colheita) for several weeks according to the state of maturation. Total destemming, crushing and pressing. Open spout vinification. Fermented entirely in stainless steel vats with temperature control and pumping times. Aged by the traditional Canteiro system, in French and American oak casks of different capacities. Attractive and bright amber color with a medium intensity. Elegant and complex aroma, with notes of molasses, honey cake, caramel, walnut and warm honey. Elegant in the mouth, intense with pronounced notes of fruit caramel.
Excellent with tropical fruit, dark chocolate, honey cake (traditional from Madeira), chocolate desserts, petit fours, praline, butter cookies, fruit cakes, coffee-based desserts, cheeses with a pronounced taste and when served like digestive or coffee. |
