Grapes from very old vines, aged over 90 years, on sandy soils of grain origin and at altitudes above 500m.

Manual harvest. Recection with total detachment, crushing, followed by a maceration. Partial fermentation in barrels of 500 liters of French oak with indigenous yeasts and in stainless steel vats at a controlled temperature.
